I&rsquo;ve been lucky enough to work in prestigious Belgian establishments such as Sanglier des Ardennes. In 2003, I was a finalist in the Concours un des meilleurs cuisiniers de Belgique and honored with the Prix Prosper Montagn\u00e9. For more than 15 years, I was head chef at a large establishment north of Bordeaux, eventually taking up the post of catering manager. During these years, I was also a finalist in the Taittinger competition and honored with the title of chevalier de l&rsquo;ordre de Prosper Montagn\u00e9, in recognition of my commitment to the quality of the table.
